Corn arepa🌽
Traditionally, in several Latin American countries, the grandmothers prepared the arepas from scratch: they collected the corn, stacked it by hand in large and heavy wooden mortars, cooked it and ground it until the dough was obtained; Currently, the corn threshing process is carried out by large machines and you can prepare it in any supermarket. If you want to prepare the arepas the old-fashioned way, here are the steps you should follow.
Ingredients:🌽
250 grams of yellow or white corn
50 grams of butter (optional)
1 pinch of salt
2 liters of water approximately

Start by washing the corn kernels to remove impurities, then in a fresh one, soak them in enough water to cover them for at least 10 hours. Over time, change the grain water and cook for 3 hours or until the corn is soft; add more liquid if you notice that it is evaporating during cooking.
When the corn is tender, remove the water completely and drain it in a strainer to remove the moisture completely. Let the grains rest for 30 minutes and proceed to crush them in the food processor with the butter and salt, until they form a uniform mass; At this point, you can add the cheese to add creaminess and flavor to your preparation.
Remove the mash from the crusher and, with wet hands, start assembling balls, then mold the arepas to your liking, you can make them round and thick or flat and thin. Preheat a wire grill or griddle, place the dough and let it brown on both sides.
